A summer rose milk recipe with homemade rose syrup and bright pink coloring.

Rose milk is particularly popular in India as a refreshing aromatic drink for hot summer days. Serve chilled over ice cubes as a sweet treat at any point of the day.

The drink is best garnished with holy basil seeds, also known as sabja seeds, as a tonic for the body, mind, and spirit.

Rose Milk Ingredients

  • 2 cups milk
  • 2 tsp caster sugar
  • 1 tsp rose water
  • 3 tbsp rose syrup
  • 1 tsp holy basil seeds (optional)
  • ¼ cup water
  • ice, to serve

 

Rose Syrup Ingredients

  • 1 cup water
  • 1 cup sugar
  • 1 tbsp dried rose petals
  • 1 drop red food coloring
  • ½ tsp rose essence

Instructions

Rose Syrup 

  1. Place a saucepan on medium heat then add the water and sugar.
  2. Bring the saucepan to a boil then add the dried rose petals. 
  3. On medium heat Infuse the syrup with the rose petals for 3 minutes.
  4. Remove the saucepan from the heat, whisk in the red food coloring, and rose essence.
  5. Strain the rose syrup into an airtight container and allow it to cool.

 

Rose Milk

  1. Soak the holy basil seeds in water for 10 minutes until hydrated.
  2. In a jug combine the milk, caster sugar, rose water and rose syrup, stir to dissolve the sugar.
  3. Into a tall glass add the ice cubes then pour in the rose milk.
  4. Garnish the top of the rose milk with holy basil seeds and serve.
