  • 1 cup carrot, roughly chopped
  • ½ tsp Jamaican mixed spice
  • ⅛ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp vanilla extract
  • ¼ cup sweet condensed milk
  • ice cubes, to serve

Instructions

  1. Place the carrots into a saucepan and cover with water, set the saucepan on the stove over high heat.
  2. Bring the carrot to a boil and cook until softened, approximately 10 minutes.
  3. Allow the carrots and cooking liquid to cool.
  4. Into a blender add the cooked carrot and cooking liquid, and blitz on high to form a thick and smooth carrot juice.
  5. Pour the carrot juice into a jug and add the Jamaican mixed spice, ground cinnamon, ground nutmeg, vanilla extract, and condensed milk, whisk together to combine. Taste the Jamaican carrot juice and add extra condensed milk if needed.
  6. Serve the Jamaican carrot juice in a glass with a few ice cubes.
