Red Hot and Blue Potato Salad Recipe

  • 4 cup red bliss potato, diced (or other red variety)
  • 4 egg
  • ¼ cup green onions, sliced
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 tsp celery seeds
  • salt, to taste
  • black pepper, to taste


  1. Rinse the diced red potatoes under cold water then place into a large saucepan. Cover with water and add a pinch of salt, then set the saucepan on a medium heat and bring the water to a boil.
  2. Cook the potatoes until tender, approximately 15 minutes.
  3. While the potatoes are cooking, prepare the eggs. Place a small saucepan on a medium heat and fill halfway with water, once the water is simmering add the whole eggs. 
  4. Boil the eggs for 8 minutes then remove from the pan and cool under cold water. When cooled peel the eggs and chop roughly, set aside.
  5. Once tender, strain the potatoes and allow to air-dry for 10 minutes.
  6. When the potatoes have cooled slightly, place in a mixing bowl and add the eggs, green onions, mayonnaise, sour cream, celery seeds. 
  7. Season with salt and black pepper then taste and serve the delicious Red Hot and Blue Potato Salad Recipe.
