Ingredients

  • 1 cup conch, cleaned
  • ½ cup red pepper, diced
  • ¼ cup tomato, deseeded and diced
  • ¼ cup cucumber, diced
  • ¼ cup red onion, diced
  • ¼ cup orange, juiced
  • ½ cup lime, juiced
  • 1 clove garlic, finely chopped
  • ¼ scotch bonnet, finely chopped
  • ¼ cup cilantro, roughly chopped
  • salt, to taste

Instructions

  1. If using a frozen conch then thaw completely in the refrigerator overnight.
  2. Rinse the conch under cold water and dry, then dice into ½” pieces and place into a mixing bowl.
  3. Then squeeze the lime juice, orange juice, and a pinch of salt over the conch, and allow it to marinate for 5 minutes.
  4. Prepare the vegetables into fine dice then add the red pepper, tomato, cucumber, red onion, garlic, scotch bonnet, and cilantro to the mixing bowl.
  5. Allow the conch and the vegetables to marinate in the refrigerator for 10 minutes to bring the flavors together and finish cooking the conch.
  6. Serve the conch salad chilled.
